THE VINEYARD
Description of the vineyard: inland to the south east of Lake Garda at an altitude of between 50 and 100 metres Soil Type: Glacial origins. Grass sward between vines.
Farming system: pergola.
Age of the vines: 15 to 25 years.
Planting density: 3,000 to 4,000 vines per hectare.
Of buds per vine: 8 to 20.
Yield per hectare: 100 hl.
PRODUCTION
Grape harvest: Picked by hand in late September.
Winemaking: Destemmed and gently pressed. Fermentation without skins at 16C. followed by maturation in stainless steel vats.
Stabilization: Protein and cold stabilization.
THE CHARACTERISTICS
Colour: straw yellow with green reflections.
Perfume: Lightly aromatic with aromas of fresh white flowers.
Flavor: appetising and delicate, yet full-bodied.
CONSUMPTION
Conservation: it can be aged for up to two years if well stored at around 14-15 C, laid down in the dark.
Service mode: serve cool at around 10-12C.
Food combining: It goes well with grilled fish and white meats, or makes a lovely aperitif.
